The Global GF-100 Nakiri knife is a traditional Japanese-style tool designed for working with vegetables, herbs, and greens. With a blade length of 18 cm and an overall length of 32.5 cm, it offers an excellent balance between maneuverability and power—ideal for repetitive tasks or handling larger ingredients. The wide blade also allows for easy collection and transfer of chopped items.
The GF-100 is forged from special Cromova 18 stainless steel—a molybdenum-vanadium alloy with a Rockwell hardness of 56–58 HRC—ensuring high corrosion resistance, long-lasting sharpness, and consistent performance even after intensive use. The final handcrafted sharpening guarantees a clean, long-lasting edge.

Useful Tips:
To best preserve the quality of the knife, even though it is made of stainless steel, hand washing with warm water and neutral soap is recommended, followed by immediate drying with a soft cloth. The use of a dishwasher is not advised to prevent potential damage caused by the oxidizing salts in aggressive detergents. For optimal maintenance, prolonged contact with acidic substances should be avoided, as they may cause slight surface oxidation.
