Description
Global GF-32: Handy, Compact and Balanced Knife for Daily Use
The Global GF-32 chef’s knife with double-edged blade is a professional kitchen tool, compact and easy to handle, designed to offer versatility and precision. With a 16 cm blade and an overall length of 29 cm, it is ideal for working with meat, fish, vegetables and various ingredients. Available online at Polsinelli, it is perfect for both professional chefs and cooking enthusiasts.
The double-edged blade features a centered grind, making it suitable for both right- and left-handed users. Forged from special Cromova 18 stainless steel—a molybdenum-vanadium alloy with a Rockwell hardness of 56–58 HRC—it offers excellent corrosion resistance and long-lasting sharpness. The final handcrafted sharpening guarantees consistently high cutting performance.
The ergonomic stainless steel handle, hollow and filled with sand, ensures perfect balance and reduces fatigue during prolonged use. The seamless one-piece construction between blade and handle offers maximum hygiene by preventing residue buildup and allowing easy cleaning.
Like all knives in the GF series, the GF-32 features a larger handle and thicker blade spine than those in the G series. Heavier and more robust, it is particularly appreciated by professionals who need reliable tools for extended work sessions.

Useful Tips:
To best preserve the quality of the knife, even though it is made of stainless steel, hand washing with warm water and neutral soap is recommended, followed by immediate drying with a soft cloth. The use of a dishwasher is not advised to prevent potential damage caused by the oxidizing salts in aggressive detergents. For optimal maintenance, prolonged contact with acidic substances should be avoided, as they may cause slight surface oxidation.
