GS-100 Knife: Ergonomic Design and Professional Performance in a Compact Format

The Global GS-100 chef’s knife, available online at Polsinelli, is a high-quality multipurpose kitchen tool designed to offer precision and versatility for both professional and home use. Compact in size, with a 16 cm blade and an overall length of 27 cm, it is ideal for working with meat, fish, vegetables, and fruit with excellent control.

The blade is forged from special Cromova 18 stainless steel—a molybdenum-vanadium alloy with a Rockwell hardness of 56–58 HRC—ensuring excellent edge retention and corrosion resistance even with intensive use. The final sharpening is done by hand to guarantee smooth, clean cuts over time.

The ergonomic stainless steel handle is hollow and filled with sand, providing perfect balance and reducing fatigue during prolonged use. The monobloc, seamless construction between blade and handle ensures maximum hygiene and makes cleaning easy, preventing residue buildup.

Knives in the GS series are characterized by their triangular handle design, specifically developed for users with smaller hands. The blades are generally shorter than those in the G and GF series, offering greater maneuverability. They are particularly well-suited for trimming and cutting vegetables and fruit, preparing fish and shellfish, and any task requiring speed and precision.

Useful Tips:

To best preserve the quality of the knife, even though it is made of stainless steel, hand washing with warm water and neutral soap is recommended, followed by immediate drying with a soft cloth. The use of a dishwasher is not advised to prevent potential damage caused by the oxidizing salts in aggressive detergents. For optimal maintenance, prolonged contact with acidic substances should be avoided, as they may cause slight surface oxidation.
