Global GS-03: Compact Kitchen Knife for Precise Cuts and Delicate Tasks

The Global GS-03, available online at Polsinelli, is a compact and easy-to-handle kitchen knife, ideal for a wide range of precision tasks. With an 13 cm blade and a total length of 26 cm, it’s perfect for peeling, trimming, cleaning fruits and vegetables, finishing cured meats, deboning small cuts of meat, or working with shellfish and small fish.

The blade is forged from special Cromova 18 stainless steel—a molybdenum-vanadium alloy with a Rockwell hardness of 56–58 HRC—ensuring long-lasting sharpness and excellent corrosion resistance. The final sharpening is done by hand to deliver clean, precise cuts even after repeated use.

The ergonomic stainless steel handle is hollow and filled with sand to offer perfect balance and reduce fatigue during extended use. Its seamless monobloc design between blade and handle ensures maximum hygiene and prevents food residue buildup, making cleaning easier.

Like all knives in the GS series, the GS-03 features a triangular cross-section handle, particularly suited for smaller hands, and a shorter blade compared to the G and GF series. This makes it ideal for tasks requiring high precision and control, whether in a professional or home kitchen.

Useful Tips:

To best preserve the quality of the knife, even though it is made of stainless steel, hand washing with warm water and neutral soap is recommended, followed by immediate drying with a soft cloth. The use of a dishwasher is not advised to prevent potential damage caused by the oxidizing salts in aggressive detergents. For optimal maintenance, prolonged contact with acidic substances should be avoided, as they may cause slight surface oxidation.
