This book is dedicated to all those who enjoy making vinegar at home, sometimes with excellent results, and to those who would like to try their hand at this art. The suggestions and advice contained herein are intended to make this activity more stimulating, and for this reason, in addition to traditional vinegars, we have also considered less common vinegars from Italian and other countries, such as apple or rice vinegar, as well as entirely exotic vinegars, those originating from other parts of the world and using raw materials that are unfamiliar to us. All recipes, especially the more unique ones, have been tested by the authors to ensure a successful end result. However, the quality of the product has not always been satisfactory. As such, the solutions proposed should be considered suggestions and can certainly be modified and refined by those determined to experiment and achieve better results.
