Binchotan is the traditional Japanese charcoal, renowned for its purity and exceptional burning properties. Produced using ancient artisanal techniques, Binchotan is crafted in stone and clay kilns, reaching extremely high temperatures that result in a product with an almost completely pure composition, containing more than 95% carbon. Thanks to its smokeless combustion and ability to maintain constant temperatures for many hours, it is the preferred charcoal among chefs and the most demanding barbecue enthusiasts.

The Binchotan White Maitiew, available at Polsinelli, is a high-quality charcoal ideal for enhancing the flavor of grilled foods and achieving perfect cooking results. With an extremely high carbon content (96-98%), it ensures highly efficient combustion, free from smoke or crackling, providing stable and even heat throughout the entire cooking process.

The Binchotan White Maitiew logs, measuring approximately 37 cm in length and 22 cm in diameter, burn at temperatures ranging from 1000 to 1200°C, with an average burn time of about 6 hours, allowing for long grilling sessions without the need for frequent charcoal refills.

How to Light Binchotan?

Since Binchotan requires careful lighting, here are two effective methods:

Method 1 – Indirect Lighting:

  1. Create a bed of softer charcoal, preferably Acacia or Marabu.
  2. Place a fire starter or wood wool between the charcoal and ignite it.
  3. Once the charcoal is well lit, place the Binchotan on top.
  4. The heat from the embers will gradually activate the Binchotan.

Method 2 – Direct Lighting:

  1. Position the Binchotan pieces vertically in the center of the container.
  2. Place the fire starters at the base and ignite them.
  3. After 15-30 minutes, the Binchotan will be ready for use.
  4. Always use tongs or heat-resistant gloves for safe handling.
