Description
Pilsner is one of the most widely used malts in continental Europe for the production of German ales. Pilsner barley malt in grain form is characterised by its high protein content, which makes it necessary to stop for proteolysis during mashing at 52°C for a total duration of approximately 10-15 minutes. Dried at a very low temperature to favour the maintenance of a high level of enzymatic activity, Pilsner malt is appreciated for its aroma and taste tending to sweetness, while its appearance is recognisable by its very light colour, which determines the chromatic base of many European beers. Available from Polsinelli in a 5 kg package, Pilsner barley malt guarantees a 100% dosage and gives German-style beers a dry, smooth and malty flavour. Store in a cool, dry place to preserve the organoleptic characteristics.
